Glucose isomerase

Glucose isomerase, also known as d-xylose isomerase, is a water-soluble enzyme. In 1957, it was discovered early in pseudomonas hydrophila that (GI) can catalyze the isomerization of d-glucose to d-fructose, especially in the production of fructose syrup, which is the key enzyme for the large-scale preparation of high fructose corn syrup from starch in industry. The enzyme can also isomerize xylan into xylose and then produce ethanol by microbial fermentation. With this enzyme, over 90% of the sugar in the grape syrup can be converted into fruit essence for a long time, which greatly increases the sweetness. Therefore, starch can be used as raw material to produce edible high fructose corn syrup.
